Lamb Shanks + White Beans
This hearty meal is the perfect way to warm up on these chilly days! Serves 4-6.
What you'll need...
- 4 lamb shanks
- 2 onions, cut into quarters
- 6 garlic cloves whole
- 4 sprigs rosemary
- Bunch of fresh sage leaves
- 2 cups red wine
- Salt and pepper
- 4 tablespoons olive oil
- Knob of butter
- 400g tin cannelloni beans
- 400g tin whole tomatoes
- Preheat oven to 180c
- Coat lamb shanks with salt and pepper and set aside
- Fry off rosemary and sage with the butter and olive oil. If using a casserole dish then use a frying pan. If you have a chausseur pot then you can do step two in the pot
- Cook off onions and garlic until soft. Add lamb shanks and cook until golden
- Increase heat to high and add red wine cook for about 2 minutes and then lower to a simmer. Add tomatoes and beans, cover and place in oven for about 1 1/2 to 2 hours. The longer the better I say!
